Rack of pork roast. Rack of pork is a part of pork that I have bee afraid to roast because it’s uneven and I don’t know how long it will take to cook but surprisingly it was a success - so jucy inside and skin crackled perfectly. I marinated the meat in spices (fennel seeds, rosemary, salt, pepper), herbs (lemon rind and sage) and olive oil. I wiped the skin well, scored and rubbed salt all over and dried it in the fridge uncovered for 3 hours. I took it out the fridge and rubbed the skin with olive oil and baking powder mixture. I baked the 1kg pork in lower rack 180 degrees for 45 min. I transfer the pork to top rack and cranked up the heat high and cook under broiler for 15 min. I carefully monitored the whole 15min to ensure it doesn’t burn. Since the rack of pork surface is uneven (unlike pork belly for e.g) highest point of skin can burn first. If one part of skin is cooked enough, take it out and cover that part only with foil. Also Use anything (I used ramekins) to raise certain part of pork to make it level. You will be so pleased with result as rack of pork meat is super jucy unlike some other part of pork. .

Nos juntamos con Antoni por Providencia y fuimos a buscarla a pata para que Antoni pudiera consumir sus drogas y "hacer hambre". Yo no necesito nada para hacer hambre. Íbamos a ir al Caramaño porque la Alisa no lo conocía (no la juzgue, es de región). Yo había ido para mi cumpleaños pero estaba cerrado. Ahora cachamos que está cerrado para siempre. Al parecer el dueño se murió la misma semana de mi cumpleaños, porque hasta me tomaron una reserva, pero cerraron sin aviso. Una lástima porque era de mis restaurantes favoritos. La plateada, los sours, las historias y todo. La cosa es que como estaba cerrado terminamos en La Vaquita Sabrosa, a la vuelta de la esquina. So you know how I’m always talking about going with the flow? I’m trying Reaaal hard right now to be okay with change.. 😂 I’ve touched on the fact that Thomas & I we’re moving from Seattle to San Diego, but helloooo, change of plans! We’re heading down to Oregon today, to apartment hunt. Random, I know. But now we will be in Oregon for 6ish months and THEN San Diego. Embracing this as much as possible. Here’s to new adventures, right? 🤷🏼‍♀️ Wish us luck! Have you guys ever moved states!? Any tips!? ... Also currently embracing fitting five of these in my mouth at once because they are SO GOOOOOD. I hinted these on my story the other day & everyone was guessing what they were. I’m not kidding when I say the texture of these were PERFECT.. like I was kind of in shock at how much they resembled the real thing. I give youuuu.. PALEO VEGAN BUTTERFINGERS. I have been experimenting with paleo “corn flakes” & they made these absolutely UNREAL. Filled with @legendaryfoods peanut butter, @lilys_sweets_chocolate & the optional little hit of @macr0mike protein. These babies will be one of my favorites from my ebook! I can’t wait to share them 😭 . .
